It involves the whole animal. Tried it once and still prefer plain barbecue.
Curiously when in Dakar with our schoolship Libertad, we were offered something similar that they also call "asado".
Well, city-wise, Barbacoa ("de cabeza", "de lengua", "de cachete", or even "de ojo" .. the one I like is "de cachete") is usually made in a large pot (instead of a dug up pit), lined with Maguey's leaves (or even cactus) to preserve the moisture. There's a slight difference in taste, of course, but it's more than adequate I can tell you.But I doubt it is actually "street food", no?
