If I'm not mistaken, that's what we down here call "chile de árbol" (pepper from a tree). And as you say, they're respectfully hot, but also quite tasty. Plenty of all types of delicious sauces can be made with them. One that comes to mind is vinegar-peanut sauce ... it's quite good, if a bit high on the calories.These are maturing almost daily and I am really happy with them. Lots of flavor and quite hot, but usable hot, not ghost-pepper hot.

I wish I knew the actual species/variety, but I don't. These were grown by me from seeds from Italy via Canada. Our first night, as we laid gasping for air in our sleeping bags (the lake you see is at 11,500'), a lightning storm came through at about 2AM. High winds, hail and driving rain. I like the mountains and love this particular spot but I'm not sure it's "calmer" than a trip to the beach!It's much cooler and calmer.

The clean crisp air is definitely one reason I keep going back. The kids all had to be lubed up with 'greasy creams' to reduce sunburn from the intense alpine sun.
