Since you're talking about a commercial installation, you really should involve a professional that is familiar with local codes and so on. You don't want your restaurant shut down by a code violation.
I agree. You do not want to be sued when your do-it-yourself LED lights drip burning plastic onto a customer.
 
Your LED is likley series of LEDs. Note the driver you have say two to five 1W LEDS.

Some stuff I found out lately is that a 0-10V dimmer is intended to turn completely off. A 1-10 V dimmer is not. At less than 10%, you have to turn the dimmer off.

0-10 V, 1-10 V, resistance and PWM are common dimming methods.

Resistance dimming is best suited for a few dimmers because the potentioneter value has to change base on the number of dimmer.
