Lately these motors (not 'old' as you say) are built to be driven with complex bi-directional capability circuitry; it may be possible as shows brushes.
---> Can you look for/find the winding schematics for that motor model ?

No I can't, unfortunately

Often those motors were controlled by a specially made IC from Motorola.
The clue that this may be the case is if there is a low resolution pulse generator on the back of the motor.
They were often wired to reverse, if this is the case, you should see 2 leads coming from the fields and a pair from the commutator.

Yes ,there is a pulse generator on the back of the motor and come out 2 wires!

Unless you have the controller board, you may have to end up running it full power, the other alternative is to use a Triac controller that are common off Amazon, Ebay etc.
To run just across the mains, you will need to identify the fields and the armature connections, if the fields are already connected in series, it will be four conductors to find.

There are 2 Grey wires going to the comutator and 6 cables going to the stator

You may have a thermal safety switch as 6 doesnt really add up, can you trace as to exactly where they go, or even use a meter, can you post a clear picture of the 6 conductors and where they end up?

Actually 5 wires going to the stator blue, brown, black, red, black.
2 grey wires going to the comutator, and two white to the pulse generator!
