Ingredients
1 teaspoon dried Mexican oregano
2 medium purple onions
Approximately 4-5 cups of enough water to cover the onions

3 grains black pepper

1/2 cup of water
Salt to taste
Instructions

Toast the Mexican oregano in a small skillet over medium-high heat for about 30 seconds. Let cool.
Remove the first thin layer that covers the outside onions, cut the onions finely in hoops. Place 4-5 cups of water in a saucepan and bring to a boil.
When the water boils, add the chopped onions and turn off the heat.
After 2 minutes, quickly drain the onions in a colander over the sink.
Place the drained onions in a glass bowl and add the vinegar (or the sour orange juice), the water, the oregano, the bay leaf and the rest of the spices. Season with salt and mix well. Refrigerate for a couple of hours, and they will be ready to eat.
They are kept very well refrigerated for about a week. And they taste better when they are prepared at least a day before.
Enjoy with your tacos, toasts, cakes, sandwiches or grilled meats.
Notes
This recipe tastes best using a combination of 2 parts of lemon juice, 1 part of orange juice and 1 part of grapefruit juice instead of vinegar. As the original recipe is to make bitter orange juice and it is difficult to find outside of Mexico, and even in some states of Mexico, many cooks use vinegar as a substitute.

I won't have my recipe probably until Christmas, also hopefully my son in-law can remember how he did the Ham. I don't really eat Ham but this one was really good to my surprise.
I'm off today, I'm just getting my first cup of coffee hopefully the weather lets me get some things done in the house today, cleaning out my wife's hoard of 25 years. I plan on selling the house and need it to be presentable, luckily I have food for the next 3 days and won't have to cook.

We always do ham and turkey sliders with the left over rolls and meat. There easy and fast and I'm a miracle whip fan so that's what I use.
I know mayonnaise is what most people like but after my first taste of miracle whip it's just my preference now. We make a dish we call vegetable casserole and I've never seen it at any other dinners I've been to and it's awesome, Beats green bean casserole hands down.

I won't have my recipe probably until Christmas, also hopefully my son in-law can remember how he did the Ham. I don't really eat Ham but this one was really good to my surprise.
I'm off today, I'm just getting my first cup of coffee hopefully the weather lets me get some things done in the house today, cleaning out my wife's hoard of 25 years. I plan on selling the house and need it to be presentable, luckily I have food for the next 3 days and won't have to cook.
Thanks for that as I never gave pickled onions a thought till you and Martinez mentioned them. Funny as I just ate some pickled beets and eggs left over from yesterday.
