I'm looking to modify a Glade automatic spray dispenser to add a switch to it, so that I can turn it ON/OFF. It requires 3vDC to run. My question is does it matter if I have a switch rated for a certain voltage, as long as it is rated higher than 3vDC?

There have been cases where a switch did not carry enough current to work reliably over the long term. A bit, say a few milliamperes, of current is usually necessary to insure any oxidation is burned away during normal use. Using say a medium power switch to make a voltage input, where no current flows is asking for trouble.

Using just any switch is not a safety issue, but of it stops working after a few months you have something to try.
