Speed control for blender

The digital display on my blender is broken. I don't want to deal with the company as they are very problematic.
Instead of the digital display I just want to add a manual on-off button and the speed variation dial.
I'm new to electronics but I guess the speed dial is a potentiometer.

The motor just has 3 wires to it a positive, negative, and earth. So I guess to lower the speed you reduce the power input.
This is the motor I have put a couple of pictures below –

That is a brushed Universal (AC/DC) motor, normally there is a Triac set up to vary the RPM's.
thank you for letting me know that. There are printed circuit boards there at the minute with a digital display I have no idea what any of it is. Is it possible for me to buy a Triac set up with a turning volume dial to vary the RPM's ?
