Doesn't the can come with a lid? A top? A cap?

Well yes and no. It comes with a cap, but you take it off to screw the spout on and once on, you dont want to have to keep taking it off. Thus the can has a flat bottom but a spout on top.

The paint can i was referring too is a spray paint can. This is like a spray paint can with a long spout on top that sticks up about 3 inches. It's about 3/8 inch diameter where it screws onto the smaller spout, and about 1/4 inch diameter at the top about 3 inches from the top of the metal can, and points slightly side ways too so it is angled slightly.

Also, the 'cap' that came with it was a small cap, not what you find on say a spray paint can. It's maybe a little more than an inch in diameter. If the top was falt (dont remember that though) it would be a balancing act to turn it upside down. But before that, the spout would have to again be unscrewed and put somewhere for storage and the tiny cap placed back on. Thus i think a jig of some kind or a strong magnet maybe would be needed to hold it upside down. I just cant see doing that anyway though.

The grease has no way of holding the air in any particular place anyway because it is a gel not a solid.

Well the grease is out now, placed into a small jar. It was disappointing though because the grease was already contaminated from what looks like the cans side wall oxidation. It was all over the side of the grease and at the top too.
If you look at pic #6 in the attachment "DEG_Teardown-6.jpg" you will see an item near the center of the pic that looks like a "fish". it should be perfectly clear like the grease but it's got brown stuff all over it making it look like it has scales, but the brown stuff is a very thin layer. See the "tail' looks almost clear, that is what clean grease looks like.

Pic 1 shows the white 'cup' inside that acts like a piston. That's before it was removed.
Pic 2 shows the cup after removal. You can see a ring of grease around the top. You can see the dirt on it as it is a brown color.

Pic 4 is a look inside the can before the grease was removed. The white cup pushes up on the grease normally when there is pressure in the can.
Pic 5 Shows a lump of clean grease on a metal rod used to remove the grease. The grease comes out in clumps.
Pic 6 is the fish shape mentioned above.
PIc 7 is a closer view of the white cup with grease removed. The shape fits the shape of the can at the top.
Pic 8 is a view inside the can after the grease was removed. You can see the dirty look it has on the top by the brown stuff all over the place. You can also see small clumps of clear clean grease.
Pic 9 is the final jar with the top off and with the grease inside. The grease is in clumps. Any part that touched the can while it was inside is dirty brown.
