There is an effect were metals in contact with organic substances such as rubbers or certain fabrics ions are emitted. The effect at least has something to do with metals contacting organic matter. What is it called?

Triboelectric effect has more to do with static generation than parts being in intimate contact. It's the separation of materials that - depending on their triboelectric scale they will be more or less prone to generation of static charges. Ionization (free ions, positive and negative charges) neutralize the static charges. A positively charged surface will attract negative ions and be neutralized. Likewise a negatively charged surface will attract positive ions and again be neutralized.

I'm not sure what @pager48 is asking, and therefore can not give a suitable answer. However, I don't think it has anything to do with triboelectric effect.

In a nut shell though Triboelectric difference is what makes a Van de Graaff generator work. Or a rubber balloon stick to the wall, or a spark when shuffling feet across the floor......
