I'm playing around practicing calculating currents and voltages in very simple transistor circuits, how much current do I need to saturate a germanium device (AC128) ?

Generally a BJT is well into saturation with a base current at least 1/10 of the collector current. The collector current needs to be limited by a resistor in series with the collector, of course.
