You said that you want to create a DIY gaming system.
I would not attempt to build my own CPU because I know how they work and it is too complex.
I would take a step forward and use an off-the-shelf CPU or MCU.
At this point in my career my goto MCU is an ARM STM32 for processing power and built-in memory.
