It seems this RV161SF-10-012J-B50K-00K pot https://www.mouser.com/datasheet/2/13/V161SF-1522278.pdf needs a threaded M1.7x0.35 knob but I could not find any knobs that could fit it on mouser or digikey.

The -00K means it includes the screw and knob per the datasheet.

 

I think you're looking for more of a "Thumb Wheel" as opposed to a knob. Knobs generally go on a shaft whereas the shaft of the pot in question is squared (two flats) that fit into a wheel. The screw holds the thumb wheel onto the pot.

I haven't seen that kind of pot since the last AM pocket transistor radio I had - and that's been over 30 years (best guess).
