Understanding CMOS and CCD Sensors And How To Use The Information From Them

Friends, how do I view and/or store information from CMOS or CCD Sensors? Other than the sensor what hardware and/or software do I need?

Please post links to tutorials or web pages that explain it, I know basic electronics and how a CPU works. I am quite electro/mechanically inclined and understanding basic digital logic and PC hardware and software.

I know that my questions seems to be at odds with each other but they are not, I do know the basics of how CMOS and CCD Sensors work but I want to go deeper still.
