My wife puts batteries in water all the time inside those Acolyte LED holders. While they close on plastic threads they are by no means hermetic, though generally seem to be dry. Perhaps they could be adapted for your needs.

The next is good ole hot melt glue: you can smear it over exposed wiring and keep it sealed.

Accidents happen. Spilling oil on a table in a wedding, even a small amount, makes happy no one.

 

Well the experiment didn't last through the night and corroded everything it could. I'm going to see if I can get an enclosed battery pack and seal it. I can't spray it with anything unless I have a switch because these have to be assembled about 24 hours prior to the wedding.

I'm with MaxHR on the discharge being the main problem. You could blob the battery ends and possibly the LED legs with hot glue - that's fairly discreet as well. Can't see the flowers enjoying the oil: they WILL wilt, just a question, as #12 says, will they hold out long enough (in a potentially warm room with lots of people)?

Not just plastic threads, those little lights have an internal greased rubber O-ring, that provides good waterproofing while still allowing the one turn of the thread needed to activate the LED circuit contact.
