Looking at the graph between 0.025 and 0.03, I see 5 transitions.
I think the sample time is 1 mS.

Those are the fastest changes.
It looks the samples are changing every sample.

Knowing the Ts, how do I calc. the resolution of the encoder?

 

You cant; look at the encoder, get its part number and google it!
