You will not find a pre-built solution for your rather high specification. I reckon your best course of action is to look at fast and deep (lots of bits of resolution) discrete ADC chips with bus interfaces and then do some work in interfacing them to an ESP32.

I think Texas Instruments offers single chip solutions like the CC3235 chip or this one (CC3220R). Head over to their site to find more.
