Typical the Voltage is the "signal" for the ADC input hence typically you do not need the impedance matching circuit.

What is role of input impedance of ADC.

It doesn't have a "role"; it's a characteristic of the ADC that can cause conversion errors when the ADC is driven by a signal source whose own impedance is a significant fraction of the ADC input impedance.

What if source impedance don't match with input impedance of ADC.

The concept of "matching" has no relevance here. for minimum error keep the signal source impedance as low as possible, and the ADC input impedance as high as possible.
