Connecting a rheostat to a motor

Hi - new to the forum. Repairing a 240v AC motor for a food mixer. Variable speed control has broken. I've sourced this rheostat from China ( yes - I know !). Need help to figure out what the symbols/marks and wiring relates when connecting to L/N/E mains and L/N power input to the unit. 400w rating for the rheotstat meets the motor. Thanks in advance. As a Guess.
The two blue's are commonly a thermal protector, the green = ground, white & red is AC, most likely the controller is a Triac based unit, and Universal motor..
