I am not keen on using the volume control to vary the feedback.

Are you sure the lower end of the pot should be connected to as shown and not to the artificial centre or earth point?

 

Ill try fixing it to the ground as well. Where do you recommend putting the pot? On the before the output/input? And would I just replace the pot with a 10k at the feedback?

 

Just get two wall warts, connect them as a standard split supply- done.
