One thing I have noticed about OSH Park and similar boards is durability. I've been able to rework several prototype boards with chip swaps and other improvments with no visible or operational damage on high quality US boards. Most of the default substrate and finish option on inexpensive Chinese boards I've used are OK for the initial install of fine-lead parts but rework makes them unreliable due to low temperature substrates deforming/charring, lines lifting and solder mask degradation.I think the main point here is "good enough" is often good enough.
