Well if the new unit or system is replacing an older one that didn't keep up then yes. More is better.

The original central air that came with my house was a 2.5 ton systems and it was frigging useless and got scrapped after the first few years of use.

Then a few years ago I put together a ~5 ton system from old commercial units parts I had and it's nice now!
Power consumption went way down being the 5 ton unit can actually cool the house well enough to shut off every hour or two for 20 - 30 minutes whereas the old 2.5 ton unit ran non stop 16 - 20 hours a day.

So sometimes more is better.
