Voltage Regulator for Permanent Magnet Motor Turned Generator

I have a bicycle that I ride indoors during the winter. I am spinning a permanent magnet motor that generates about 30 volts DC at high RPM. I am trying to use a 12 volt DC to 120 volt AC inverter to run, for example, a TV or a fan but when the voltage gets above 16 volts or so the inverter stalls. The DC motor is from a tread mill so it is heavy duty. I can pedal all day at 120 watts output so it shouldn't be a problem running a small TV. Any suggestions as to what I can use to keep the voltage at 13 volts or so?
