Tracking State of Charge (SoC) for 26Ah Li-SOCl2 (Saft LSH20)

First time dealing with lithium batteries, I am using a 3.6V 26Ah Li-SOCl2 battery (Saft LSH20FU) for a long-term remote project. I am struggling to identify the discharge pattern: does the voltage drop gradually throughout its life or does it stay flat and then drop suddenly at a certain point? I want to know at what voltage I should consider it 'empty' and how the battery behaves when it finally nears the end of its capacity.
