In the Owon there is a simple reason to keep colors unchanged. It coincides with the knobs and connectors of the corresponding channel. Your visual "tracing" to know what probe is hooked to what is thus, quite simple.

Same with the Siglent but that could be fixed by either not marking it or making colored attachments.

Yes, I hadnt noticed that but its true, yellow and blue are the selected channel colours
