Are there laws on how tortillas / tacos are to be prepared in restaurants in Mexico? For example, in Italy you need to bake you pizzas in a wood fired oven to be called a pizzeria. I can't remember what the electric oven places are called but the best pizza I ever had came from a n electric oven in Varese. It was made with ricotta cheese. It was delicious. Well I guess maybe the taste was helped by the fact I was cold, wet and hungry from riding in the rain all morning.

Not really... in fact there are quite a few different types of tortillas out there. There are green, cilantro-mixed tortillas, high-nixtamal yellow, and black and blue huitlacoche tortillas, for instance... hell, now that I think of it, there's a tortilla for every color of the rainbow out there!

On a related subject, on one of my many trips to Cozumel to go SCUBA diving, I was out for a morning walk before our dive. I noticed a vendor stirring and enormous pile of ground beef on a grill. He just kept stirring and stirring . I went down to get on the boat. Typical all day diving with lunch in between dives. Got back off the boat and that same man was still stirring that pile of ground meat. I swear it was the exact same size when I had left in the morning. I don't think he sold one taco.

I've only been once, but it's on my do-again list. The best diving I've experienced was on Curaçao, but that was the circumstances more than the location (which was excellent, though).
