I might buy stock in the company because there is a never ending supply of young persons full of liquid stupid that need something to puke up later in the night.

But I ain't gonna buy the "product" of that booming business

A sample of what came out of the smoker earlier this evening ....

I have some snacks ... both had honey applied, in the brine for the salmon and drizzled on the dry rub for the sliced chicken breasts.

Looks healthy, I should have taken photos of the boneless chicken thighs and drum sticks and stuffed mushrooms from last night.

Maybe it's time to do some dehydration ... watermelons ... for a naturally sweet snack.

We smoked some chicken thighs a couple of weeks ago. deboned them and ground them up with onions and pickles for a nice sandwich spread.

I love a good chicken salad sandwich! Using smoked thighs sounds way better than the usual.

I bet that would make for some real good chicken salad.

Smoked salmon is another one of those things I love. Smoked salmon, cream cheese, red onion and I like capers on a bagel sandwich.

With a holiday weekend looming I am looking forward to some great eating. Neighbor is throwing a party so I have been thinking about making a large brisket I have in the freezer and my wife will make a macaroni salad. The 4th of July has always been among my favorite holidays. We will also have the grand daughter up that weekend so it should be a good time. Neighbor makes incredible pork ribs and baked pasta.

For my salmon sandwich, it's toasted bread, sliced smoked salmon, cooking cheese, melted, topped with dried tomatoes in olive oil and spices.
I get a rosemary baguette from the local Health Food store, made with Tapioca flour and fully cooked but frozen. Toasting them softens the bread perfect crust around the edge, I dribble a little olive oil.

I'll bet your version of a Salmon sandwich would go well with it.

I think I'll show some picks and get some smoked salmon. Yum.

I think I overdosed today on food. Neighbor had a 4th party and party we did as well as massive BBQ. I did brisket with home made sauce and the wife made macaroni salad.

We had grilled pork loin, grilled chicken strips marinated in Italian dressing, some hot dogs, grilled corn on the cob, home made potato salad, home made mac and cheese, and stuffed jalapeno peppers.

I did cook the pork a minute too long though.

Sorry no pictures. but we did a traditional 4th feast: Grilled brats, brined cucumber slices in sour cream and dill, fresh tomatoes with garden basil, corn on the cob. Rootbeer floats for dessert. A few other sides.

Question: Brats are as popular as hot dogs and hamburgers around here but I've heard that they're barely known outside of this area. Is this true? Do you guys not grill brats at least a couple times throughout the summer?

I bought a slip & slide to keep my brats occupied. It never occurred to me to grill them.

</sarcasm>

I think most Texans know what bratwurst is and eat it from time to time but it's definitely not as popular as burgers and dogs here in TX.

Brats here are plenty popular. Matter of fact I just had a few last week at a graduation party and I cook brats several times a year. They are popular in several store bought brands (Johnsonville comes to mind) and a few smaller local food distributors. Anyway, yes, brats are popular around me in NE Ohio USA.
