Simulation of a Glucose Biosensor

Hello!

I am trying to design and build a circuit to simulate the operation of a glucose biosensor. Basically, I need circuit that provides an output of a small current proportional to the amount of glucose in the blood, but since I don't have access to blood samples I will simulate the amount of glucose with a potentiometer or with samples of something else. The output current needs to be in the micro amperes range. I have searched a lot and have just found circuits that provide mili amps.

Please note, I am NOT asking for the full circuit or to get the work done by someone else. I just want an insight on how to start, something like what Integrated Circuit I can use that has an output of micro amperes or anything else that provides very small currents.
Any information you could provide on how to start or where to search will be much appreciated.

Do you need to know what the current actually is, or is it sufficient simply to provide the current?
How stable does the current need to be?
What accuracy?
