Definitely an odd case -- and you can bet the conspiracy theorists are going to grab onto it (especially given some of the roles he played).

One the one hand, it's hard to believe that your wife could be lying there dead for a week without you noticing something (I would think the smell would be getting pretty strong by then). Then again, we tend to think in terms of a typical married couple in a typical house. My guess is that their house is a lot larger than typical and, given their ages, it's quite likely that he stayed without a fairly small section of the home and it might have been common for them to not see each other for days at a time.

As for the dog, my guess would be that it died of thirst. Not a fun way to go. I don't know about the other two dogs. Perhaps they were in a different part of the home that had access to the outside or some other source of water?

This is the first I've heard that he had Alzheimer's. That would certainly explain a lot.
Those guys valued their privacy but at some point IMO, a live-in housekeeper or relative should have been there for them, if only to make sure the end was a comfortable one instead of one that sounds like slow death.

Yes, especially with advanced Alzheimer's. Hard to believe they had no full-time staff at the house. But, to each their own...

The wife was probably the one very protective of their privacy, since Mr Hackman could no longer take care of himself. And being 65, I'm also sure she was quite fit and in good health. Or at least that's the way she looks in the pictures. But then disaster struck in the form of an illness that she couldn't handle by herself. An in-house housekeeper or a handyman would've made all the difference.
