you will have a choice of weights, depending on the rating of the cooker and the atmospheric pressure under which you are operating. 10 and 15 lb is common. We started pressure cooking our waterfowl harvest during our fall bird hunts.

Well I took the actual temp sensor / thermostat out and tested the continuity between the contacts. It has continuity.

Should there be continuity between the contacts and what does this say about this component?

It should read continuous up until a fixed setpoint. This device is your basic bimetallic switch, but constructed to handle switching at repeated cycles. unlike the first device which is a an overtemp safety.
