Egg whites are a silly product that shouldn’t exist, driven apparently by the same idea as white sugar and white flour, that somehow a food is “better” when purified away from its color. Endless studies show the opposite and yet people are drawn to this silliness. I don’t get it.Whites? Not on your life. The yolk is where the fun is.
If I remember correctly, white flour was invented during the middle ages. It was valuable because it contained no impurities, such as sand and rocks, and it was much easier on one's teeth. It was considered so valuable that some households would keep it safely stored in a locked coffer. White sugar, on the other had, was valuable because it didn't alter or muddle the color of pastries. White sugar has all the bad properties, the best nutritious part is Molasses and was removed from the sugar and only used in animal feed at one time.White sugar, on the other had, was valuable because it didn't alter or muddle the color of pastries.
