I've got LTspice - and you're right; its not great for drawing.I'd consider using LTspice. Not great for drawing but you get a simulation out of it.

This is also what I use, pretty easy to learn and making new components is fairly easy.ExpressSCH - the schematic component of the free ExpressPCB software.
ExpressPCB is on the same web page as ExpressSCH.I like Diptrace. Not exactly "minimalist" but for the number of features it has,really easy to use. ExpressPCB is pretty easy to use too IMHO.
