They always been fine because they were designed for this application. The newer ones like the ina851 are better because of the over voltage protection they built into them. This series is low noise enough that some of them, like the ina217 has been used for decades in pro audio.Exactly right about the two conductor shielded cable. But I am not so very certain about the line driver because I am thinking they are not high precision devices. And at least some line drivers are for digital applications, not linear at all.
Digital drivers like what is used in RS485/RS422 were good to use but you have to condition the signal afterwards.
