I was wondering if i can use an zener diode instead of a transistor to make that single transistor oscillator cause basically it works on breakdown of the emitter. Or making a Pierson anson oscillator using zener diode instead of neon lamp.
Any suggestions?

In this circuit the BJT now behavior just like a poor's man tunnel diode (Esaki effect).
And tunnel diodes will have "negative resistor" region. And this circuit will not work with all NPN transistor and will never work with PNP transistors.

 

A neon lamp can be used in an oscillator circuit because its breakdown voltage is higher than it's sustaining voltage (negative resistance).
A zener has its breakdown voltage the same as its sustaining voltage, so won't work in a oscillator circuit.
