LED controllers for high powered LEDs?

I'm curious as to how the controller, driver and power supply interact with each other.

I'm looking at a Mean Well HLG-320H-54B power supply, and it's a 3 in 1 PWM, 10V PWM, 1-10V, and resistance.

The LDD driver also has an input for dimming. so if I used this power supply with an LDD H, would I wire the controller to the driver for dimming, or would I use the power supply's dimming functions?

The LDD drivers are intended to be used with a constant voltage power supply..
Many of meanwells products are a regular ac to dc power supply + constant current output drivers all incorporated in one package.. They work great for a single 100W or 50W or 20W LED or a single string of smaller wattage ones.. But you only have 1 channel and they typically cost $20-40 each.. Great for a lamp but horrible (expensive) for a complex multi-channel light fixture.
With multi channel setups going that route will cost you more money vs LDD's.. As you are paying for the AC to DC conversion portions with each led driver..

Some of the meanwell power supplies will also do either constant voltage or constant current.. You just need a constant voltage mode one with the LDDs as the LDD's set the output current..

You just need something like a regular 48V @10A power supply and then enough LDD-700s for the number of strings you need..
The 48V supply will power all the LDDs/LEDs..
Something like this should be ok..

Always run PWM control signals to the LDD's.. even if you get a power supply with its own constant current optional mode.

I wasn't going to use the MW power supply for dimming or anything, I was just wondering if I was using one of those to power the LEDs would I run the controller PWM to the PSU or the drivers.

but I see what you're saying (and thinking I was going to do maybe) was to use the power supply for the dimming, which as you point out would be horrible :)

I like the ones you linked though, much cheaper price and will do what I need perfectly.

I have 11 different colours of LED's and if I can fit them in the heatsinks I'm going to run each colour on a separate channel.....so 11 LDD's, but I'm half considering using my arduino mega and 3.2 TFT to make(read: hire a freelancer) my own controller for the lights similar to the JArduino controller which is probably never going to have the new version released and I only want the LED control portion of it anyway.
