The size and type of motor will depend on a number of factors:

The volume and rate at which air is to flow.
The size of the exhaust ducting.
The type and efficiency of the blower (fan blades or centrifugal).

Small motor of this type, small fans etc, are generally shaded pole motor, one thing to aid motor longevity is to protect the motor itself from oven heat and particle laden updrafts.
They are generally stepped speed by multi position switch or variable resistance Triac control.

If using a shaded pole motor it does not require a capacitor.
Use a radial fan and if possible use a ball bearing motor for longer life.
