Kitchen Hood controls

Hi there!
Is it possible to use the yellow wire of this kitchen hood controls to power a relay to control a remote fan motor? I would like to keep the remote fan running on with any of the different speeds of the Exhaust fan.

Probably there is. When one speed connection is powered there are voltages on all three connections. So the middle speed connection can probably provide enough power to operate a low power relay to control whatever you want. And it will work for all three speeds.
A multispeed induction motor functions like a transformer when it is running. That is the unintended consequence of the fact that for a lower speed there are more turns used in the windings so that the motor runs slower. You can verify that with an AC voltmeter. When it runs on the higher speed the voltage at the low speed connection is quite a bit higher than the mains voltage applied to the high speed terminal. So really, the connection to the remote relay should be to the speed that you use the most. I would suggest trying with it on the fast terminal and then see if it still operates when the low speed is selected.
