Given that current is flowing in the emitter circuit of the example, a voltage is indeed developed across the emitter resistor.So there is a Vee present . It may, or not, be entirely developed by emitter current passing thru the emitter resistor.
I see your point. I assumed zero series resistance for "in". If the input has significant impedance itself, then yes, Vee matters

One more thing is that just because a circuit will "work" does not mean that it will produce the desired function, but rather it would provide the the stated function. The circuit that produces the plot in post #12 "works", but it also delivers a distorted output.
