I have an assignment to implement four circuits doing simple things with flipflops, (eg traffic light using flip flops) I need ideas and walkthroughs on how to create simple electronic projects with flipflops

For something silly you could build some type of simple counter circuit built in to a pair of actual flip flops, maybe have it triggered by some small tactical switch in the heal(s) to count the steps taken. Not quite sure the exact scope you'd need to make it qualify for your assignment but I'm sure you would be able to figured that part out.
