I have a project that I have to measure the temperature of a soldering iron sensor and I do not want to use microcontroller without isolation, I would know if theres is IC, you can converts analog signal to digital with isolation with photocoupler

You can use an opto isolator, but they can carry either an analog or a digital signal.
They don't convert from one to the other.
For that you need an A/D or D/A converter.

What temperature sensor does it use?
