How to convert push buttons to on/off switch?

The (green) vacuum button is no problem, the (red) release is going to be more of a problem because it certainly appears to be a way to mechanically operate a valve.

Strangely, it looks like the vacuum button is connected to a MOSFET and may operate the motor directly.

I don’t want to give the impression you couldn’t operate the release remotely. It would just be a matter of using something like a solenoid to “push” the button electrically.

I am a bit concerned about safety, though. Being able to remotely drop a panel sounds dodgy.

"Y" is correct on the release function. THAT is why I suggested a mechanical operator for all three in unison. It would not depend on mains power, and be fairly local. Probably OSHA acceptable.
