how to control temperature control

Hi guys, working on another project,
a 220 volt controller for a crawfish pot

right now, i can control the element using the pot, and eyeballing the amps
what I would like to do. is install a temp probe in the pot
to control the ssr is this doable ?

what would I need to do it ?

The MyPin TA4 PID units are the most versatile and my preference but for a basic temperature control pick what one looks like it will work for you.
