How can i connect the water level switch to microcontroller ?

It is up to you if you use ST in, it is less of a necessity if using a Opto in maybe, but any potentially noisy input I try and use ST if available.
Are you not intending to protect the cable on a 15m run. Even SO-18/2 or SO-18/3?
You could even use a 3wire and bond/GND the tank, if metallic.

What else is involved with this system apart from the level sensor, I assume the micro is controlling something as a result?
SO cable is rubber sheathed flexible cable, is the 15m run exposed to any elements or in danger of damage?

You could, but I would not myself, depending on the conditions it is installed under.
My questions were to try and ascertain the environment it is installed in, and what is it controlling, IOW, knowledge of the Application helps..
I just get a terse 'Yes'.:(

The level switch will stop the water pump once the water reach the full level ^^

I will insert the cable inside a plastic tube like the following

Any particular reason you are using plastic tube?
Although there is PVC conduit and fittings.
In an industrial, or even semi industrial environment I generally use flexible metallic conduit.

The tank placed on the roof of the building .
10m of the cable placed outside my flat and the other 5m inside.
So I am thinking to use plastic tube to protect the cable from rain ,sun ...
