Why not buy an ESP32 on a development board. They have castellated holes so you can solder thos boards to a carrier board if you want to integrate with other components. Designing an antenna can be a challenge and then you also have to worry (more) about stray emissions if you don't buy a module. Just $3.25

 

As @MrSalts says, the ESPxx breakout boards designed for surface mounting give you a lot of advantages over the bare modules. This includes FCC approval and very refined RF related layout.

So, the question is, why do you want to make your own PCB? Do you have some reason that precludes the use of the breakout board route? Many commercially produced devices use the surface mount devices to avoid the various pitfalls of RF related design.
