Pretty new to all this (very new), but I was wondering.

Is it possible to have a single PoE cable power a device, and then from a second ethernet/RJ45 port on that device, run another Cat5/6 cable to the next device to power that one? Could both units have their own IP address and be individually addressable? Would there be a special PoE chip or microcontroller required?

Curious if anyone has seen this done and what chips/wiring for such a thing would look like.

No, you need a switcher, run the switcher from the modem, and then plug your devices into the switcher.
