I have a Chrysler 300m Special that has a factory AMP (11 Speaker Infinity System). I want to replace the head unit with a CarPC that I built which has 7.1 sound. What do I need to do to achieve getting sound from the CarPC to the car's speakers. Not interested in keeping the HU, its just a basic deck.

I suspect you will need a 7.1 amplifier with each speaker wired to the 7.1 amp. If your original amplifier is not 7.1, I don't think it makes any difference what you put into it, you will only get out what the original amp is speced for.
