Didn't know you had to use antifreeze in Florida!
It's mostly corrosion inhibitor for the aluminum parts and lubricant for the water pump.
It also increases the boiling point of the "water"...not that this seems necessary with a 16 PSI pressure cap.

It also increases the specific heat of the liquid and that increases the efficiency of the radiator.
That's almost like increasing the mass of the liquid because it increases the thermal mass.
The goal is losing heat with a minimal decrease in temperature.
