Unqualified explanation as fodder for bigger brains:

I think it's because a rotary indicator is used to represent a linear force, so there is some trigonometry involved. Also the spring for returning to zero has nonlinear force:displacement ratio so they probably try to pit these two aspects against each other in a way that results in linear deflection but it isn't perfect.
