Need some insight into whether half or full-bridge load cells connected in parallel to one HX711 is the better choice.

As 4x half-bridge load cells is the usual component in household scales, what pitfalls could I face if I connect 4x full-bridge to one HX711? Power requirements will increase for one, what else do I need to consider?

Depending on the total resistance value of the 4 * Full bridges and the excitation current required, you may need to add the Excitation circuit as shown in this HX711 PDF.
