480 Vac will kill or damage you quickly. I say:
- Clean up the wiring so the paths are easy to see.
- Put a sheet of plexiglass over it.
- Bring connections out to test points in the plexiglass.
- Put an emergency kill switch in an accessible location.

In fact I would not use 480 at all. I would drop the Vac down to 10 volts.

Students are stupid and this looks like a death trap.

if you bring it down to 12 volts, what was 120 is now 12, what was 480 is now 48. might make it easier to interpret the real world values.

I need to keep it at 480v as this is what the students will be working with when they graduate and I need it to be as realistic as possible. Kind of looking more for suggestions on lessons to teach using this mock-up.
