hey, I want to change Via drill diameter in my pcb to maintain some impedance, I could change other parameters to get that impedance but I was wondering, is it possible to vary drill diameter? Will PCB manufactures have different drill options for different vias?

What do you mean by impedance? Like capacitance between layers? Or something else.
They can drill almost any size you want.

The sole difference between a via and any other thru hole is the via has no solder mask relief and thus is filled in with the mask... most of the time anyway.

Actually achieving 100% fill is hit and miss with the cheap commercial boards I use.

So change the via drill diameter to anything you wish. As long as your vendor has that bit they ain't gonna care.
